Is cheese the best combo with wine? Well...aside from a medium rare porterhouse steak - YES
The best wine cheese is a matter of taste as far as what people like.
I personally like non-sharp cheeses
Fiore di sardegna and Manchego cheese are probably my favorites to go with good red wine. Well - there's no reason to ever drink bad red wine!
I also love fresh mozzerella
